Well, folks, we're in the home stretch! The 2014 Lauren's Hope Health Challenge is coming to a close, and it has been an incredible month around here! We are excited to share our "After" photos with you when we take them next week. The Lauren's Hope Health Challenge is well into its third week, and things are going pretty well around here! There's been quite a bit of recipe-sharing and leftovers-swapping happening, which is a lot of fun! We've also been sharing resources, such as smaller, local meat markets and out-of-the-way health food stores with good prices. It's really great seeing everyone working toward their goals and supporting one another in the process!

Those of you participating in the Lauren's Hope Health Challenge (which you can still join!) may have noticed that my biggest concern about trying the "Paleo" way of eating for February isn't the lack of bread or chocolate or even milk for my coffee. It's cooking. My "cooking" to date has been a long-standing family joke. I would invite family for holiday meals and they would not-so-subtly ask who was going to be handling the kitchen duties. My mom would come visit and offer to bring in Chinese food for dinner or suggest we all eat out. Until this month's challenge, I had basically mastered the art of taking tofu crumbles out of the freezer, adding some sauce, and microwaving them with some steamed vegetables. It's not my proudest accomplishment.
The first-ever Lauren's Hope Health Challenge started this past Saturday, February 1, and the big topic around the office this Monday was how we all did with our health and fitness goals over the weekend. I was excited to share some Paleo blueberry muffins I made, which were really pretty good, despite the fact that they looked nothing like the original recipe's adorably delicious-looking photo.
Earlier this week, I made a big commitment. I decided to adopt a strict Paleo eating plan for one month to try it out, starting on February 1. I decided to share this decision with all of you here on the Lauren’s Hope blog and invite you to join me in making one health-related change for the month of February. It would be fun, I figured, and it would certainly help me stay accountable. So I went about my business, typing up a fun article, putting together some interesting facts and art, and proofreading my work. I had the whole thing all ready to go. And then I scrapped it. I deleted the whole thing.
If you're like the majority of Americans, you've likely made (and maybe even broken) some New Year's Resolutions & Goals for 2014. Eating better is one of the most common resolutions people make. But there's just so much information and so many options out there that choosing a "diet" or deciding what way of eating will not only be better for you but also feasible for you to stick with can be overwhelming. We're not nutritionists here at Lauren's Hope medical ID bracelets, but we've done some leg work to help you get started figuring out your options. Just because it's January 10th doesn't make it too late to set some better eating goals for the new year!
It's Christmas. For many, that means presents, family, and lots and lots of food. When you're cooking for a family that includes people with food allergies, food intolerances or sensitivities, diabetes, Celiac disease, other health conditions, or special diets such as gluten-free or paleo, preparing those holiday feasts can be a little overwhelming.
