Summer travel can pose some pretty interesting dilemmas to those of us with food allergies, food sensitivities, and Celiac Disease. If you’re like me, one of the estimated 20 million Americans with some variety of gluten-sensitivity, summer travel can cause more headaches than a delayed flight or highway construction.
Celiac Disease Awareness Month is very close to my heart. I was diagnosed with Celiac Disease almost a year and a half ago, and although it's something I live pretty comfortably with now, it wasn't a happy or easy diagnosis to get by any means.

Well, folks, we're in the home stretch! The 2014 Lauren's Hope Health Challenge is coming to a close, and it has been an incredible month around here! We are excited to share our "After" photos with you when we take them next week. The first-ever Lauren's Hope Health Challenge started this past Saturday, February 1, and the big topic around the office this Monday was how we all did with our health and fitness goals over the weekend. I was excited to share some Paleo blueberry muffins I made, which were really pretty good, despite the fact that they looked nothing like the original recipe's adorably delicious-looking photo.
Life after diagnosis has been smooth sailing for the most part. Since my father and I are both gluten free, even Thanksgiving and Christmas (normally a pretty gluten-y affair) were both huge successes for us, and by success, I mean it felt normal, and that meant a lot to the both of us.

Earlier this week, I made a big commitment. I decided to adopt a strict Paleo eating plan for one month to try it out, starting on February 1. I decided to share this decision with all of you here on the Lauren’s Hope blog and invite you to join me in making one health-related change for the month of February. It would be fun, I figured, and it would certainly help me stay accountable. So I went about my business, typing up a fun article, putting together some interesting facts and art, and proofreading my work. I had the whole thing all ready to go. And then I scrapped it. I deleted the whole thing.
As soon as I was greeted by the nurse, I knew something was amiss. The nurse quickly ushered me into an exam room, and only a few short minutes later, my doctor followed.

I’m the brand-spanking new content creator at Lauren’s Hope, and I (like almost 8% of Americans) have an autoimmune disease. In fact, like most people who have an autoimmune disease, I have more than one: Celiac Disease and Hashimoto’s Disease.
