For those of us with Celiac Disease, the holidays can present a bit of an extra challenge. We’re faced with a seemingly endless spread of terrific-looking goodies that we can’t eat. While those options may look tasty, there are tons of great gluten-free choices that won’t make you take a chance on your health.
About a year and a half ago, I was diagnosed with Celiac Disease. Although now I know that I can enjoy a lot of the same foods (albeit modified) that I could before my diagnosis, there’s not a day that goes by that I’m not nose-deep in an ingredients label, sifting through all the jargon and manufacturing information that usually goes unread.
When it comes to Summer, aside from the warm weather and pretty flowers, my favorite part is cooking out with friends and family. Since I was diagnosed with Celiac Disease, however, I look at barbecues a bit differently. Instead of seeing a delicious spread of potato salad, coleslaw, and chips, I see unknown cooking surfaces, mystery seasonings, and cross-contamination risks.
The Lauren's Hope Health Challenge is well into its third week, and things are going pretty well around here! There's been quite a bit of recipe-sharing and leftovers-swapping happening, which is a lot of fun! We've also been sharing resources, such as smaller, local meat markets and out-of-the-way health food stores with good prices. It's really great seeing everyone working toward their goals and supporting one another in the process!
Those of you participating in the Lauren's Hope Health Challenge (which you can still join!) may have noticed that my biggest concern about trying the "Paleo" way of eating for February isn't the lack of bread or chocolate or even milk for my coffee. It's cooking. My "cooking" to date has been a long-standing family joke. I would invite family for holiday meals and they would not-so-subtly ask who was going to be handling the kitchen duties. My mom would come visit and offer to bring in Chinese food for dinner or suggest we all eat out. Until this month's challenge, I had basically mastered the art of taking tofu crumbles out of the freezer, adding some sauce, and microwaving them with some steamed vegetables. It's not my proudest accomplishment.
Life after diagnosis has been smooth sailing for the most part. Since my father and I are both gluten free, even Thanksgiving and Christmas (normally a pretty gluten-y affair) were both huge successes for us, and by success, I mean it felt normal, and that meant a lot to the both of us.
As soon as I was greeted by the nurse, I knew something was amiss. The nurse quickly ushered me into an exam room, and only a few short minutes later, my doctor followed.
